Honest caveat: GreenPan settled a class-action lawsuit over "toxin-free" marketing language (dismissed with no finding of liability), and Serious Eats notes that "ceramic" is an unregulated marketing term — most brands, including all four here, do not disclose the exact sol-gel composition.
