cutting op• Data kinds: rgb × table × scalar × scalar → table
• Call: import fullseye as fs; fs.ledger.cut_depth_from_side(image, track, px_per_mm: 'float', board_row: 'float', win: 'int' = 5) -> 'dict' (to call the implementation directly, import cutting; cutting.cut_depth_from_side(image, track, px_per_mm: 'float', board_row: 'float', win: 'int' = 5) -> 'dict'; from the registry, opsdrive.get("cut_depth_from_side"))

正面像の食材の上面(彩度の縁、列ごと副画素 → 中央値)と刃先の直線から切り込み深さ(mm)。
深さ = 上面の z − 食材の幅の中央での刃先の z(:func:knife_edge_track の直線の内挿)。刃が曲がっていればそのまま誤差になる。
返り値: `depth_mm、top_z_mm、edge_z_mm、food_cols(左右)、n_cols、centre_col`。
