Japanese Green Teas
Our Japanese green tea collection showcases the remarkable diversity of teas produced in Japan. From the grassy sweetness of premium sencha to the rich umami of shade-grown gyokuro, these teas reflect centuries of Japanese tea cultivation expertise. We source from family-owned farms in Uji, Shizuoka, and Kagoshima that employ traditional processing methods passed down through generations. Each tea is steamed within hours of harvest to preserve the vibrant green color and fresh, vegetal flavors that distinguish Japanese green teas from their Chinese counterparts.
Oolong tea occupies the vast spectrum between green and black tea, and nowhere is this diversity more apparent than in the oolongs of China and Taiwan. Our collection includes lightly oxidized high-mountain oolongs from Taiwan's Ali Shan region, with their buttery floral character, as well as heavily roasted Wuyi rock oolongs from Fujian province, known for their mineral complexity and lingering finish. The craftsmanship involved in producing fine oolong tea is extraordinary, with master tea makers carefully controlling oxidation and roasting to coax out layers of flavor that unfold across multiple steepings.
India produces some of the world's most celebrated black teas, and our collection highlights the distinctive terroir of its major growing regions. Darjeeling teas, grown in the cool Himalayan foothills, are prized for their delicate muscatel character and bright, complex flavors that vary dramatically between the first flush of spring and the later harvests. Assam teas, from the lowland river valleys of northeastern India, offer robust, malty richness that stands up beautifully to milk. Nilgiri teas from the Blue Mountains of southern India provide a fragrant, brisk cup that is equally enjoyable hot or iced.
Proper brewing is essential to experiencing each tea at its best. Water temperature and steeping time vary significantly between tea types. As a general guide, delicate green teas should be brewed with water that has cooled to around 160 to 175 degrees Fahrenheit for one to two minutes. Oolong teas benefit from slightly hotter water at 185 to 205 degrees and steeping times of two to four minutes. Black teas are typically brewed with fully boiling water for three to five minutes. However, these are starting points, and we encourage you to experiment to find the strength and character you prefer.
Water quality matters more than most people realize. Filtered or spring water generally produces the best results, as chlorine and excessive minerals in tap water can mask the subtle flavors of high-quality tea. The vessel you brew in also makes a difference. A simple ceramic or porcelain teapot or gaiwan allows you to appreciate the tea's true character without interference. For oolongs and pu-erh teas, Yixing clay teapots are traditional and can enhance the tea over time as the unglazed clay absorbs and releases flavors with each use.
