Arugula Salad with Pears and Walnuts
Peppery arugula (rocket) leaves with sliced ripe pears, candied walnuts, Parmigiano shavings, and a lemon vinaigrette. Ingredients
- 120 g arugula (rocket, rucola) leaves
- 2 ripe pears, cored and thinly sliced
- 60 g walnuts, roughly chopped (toasted or candied)
- 40 g Parmigiano-Reggiano, shaved with a peeler
- 2 tbsp lemon juice
- 4 tbsp extra-virgin olive oil
- 1 tsp honey
- Salt and freshly cracked black pepper
Method
- Whisk lemon juice, olive oil, honey, salt, and pepper into a dressing.
- Arrange arugula (rocket) on a large plate or in a wide bowl.
- Scatter pear slices, walnuts, and Parmigiano shavings over the leaves.
- Drizzle dressing over just before serving. Toss gently at the table.
