Okonomiyaki
A Japanese savory pancake (okonomi-yaki: "what you like, grilled") made with shredded cabbage, flour, egg, and your choice of additions — bacon, shrimp, or vegetables. Ingredients
- 200 g plain flour
- 300 ml dashi stock (or water with 1/2 tsp dashi powder)
- 3 eggs
- 400 g white cabbage, finely shredded
- 4 rashers streaky bacon (or 100 g shrimp/prawns)
- 2 spring onions (scallions, green onions), sliced
- Okonomiyaki sauce (or mix: 2 tbsp Worcestershire, 1 tbsp ketchup, 1 tsp soy sauce)
- Japanese mayonnaise (Kewpie)
- Katsuobushi (bonito flakes) and aonori (dried seaweed) to top
Method
- Whisk flour, dashi, and eggs to a smooth batter.
- Fold in shredded cabbage and spring onion (scallion). Mix well.
- Heat oil in a pan. Pour in half the batter. Lay bacon rashers over the top.
- Cook 5–7 minutes on medium until set underneath. Flip and cook 4–5 minutes on the other side.
- Drizzle okonomiyaki sauce and mayonnaise over. Top with katsuobushi and aonori.
