How I'm Learning to Cook at 31 (And Failing Spectacularly)

So I decided in January that this was gonna be the year I stop eating frozen burritos for dinner four nights a week. Noble goal right? Here's how that's going.

Week 1: Made a stir fry. Burnt the garlic AGAIN. I swear garlic goes from "not ready" to "carbonized hellscape" in like 3.5 seconds. The smoke alarm went off. My cat judged me. Still ate it though because I'd already dirtied every pan I own.

Week 3: Attempted pasta carbonara from that Bon Appetit video. Scrambled the eggs. It was basically expensive breakfast pasta. You know what though? It tasted fine. Would I serve it to another human being? Absolutely not.

Week 6: Actually made a pretty decent chicken thigh situation with roasted vegetables. I was so proud I texted a photo to my mom and she said "that looks... good!" which is the most backhanded compliment of all time but I'll take it.

The big revelation so far: mise en place is real and I was a fool to ignore it. Chopping an onion while your oil is smoking is not the vibe. Also sharp knives. Game changer. I can't believe I was out here sawing tomatoes with a butter knife for a decade.

Still burn the garlic every single time though. Some things never change I guess.
